Five Days of Favorite Things: Day Five: Cookies and Cream Cupcakes {Recipe}

It’s Friday, y’all!

Is there a better way to celebrate a Friday than with a cupcake?  Is there a better way to celebrate ANY day than with a cupcake?

I think not.

This is one of my all-time favorite cupcake recipes.  I’ve had it written down on the same piece of paper for at least two years now.  I have no idea where I found it online originally, but I have seen it on more than one site since.

And, yes, this is a cheat recipe because it uses a box mix for the base.  So sue me.  Everyone has at least one cheat recipe in their arsenal.  This one is mine.  And it’s a good one.  A lot of the recipes I’ve found use Oreos in the icing as well, but I find it to be overkill.  I’m also the girl who eats the side of the cookie with the cream filling on it and tosses the chocolate-only side, so take it how you will.  I also prefer Double Stuff Oreos for this recipe.  Any type of Oreo will work, though.  Again, it’s all about the filling for me.

Cookies and Cream Cupcakes:
Makes 24 cupcakes

2 packages Oreo cookies
1 box white cake mix (not the pudding-added kind)
1 cup lowfat/fat-free sour cream
3 eggs
1/2 cup vegetable oil
1 tsp vanilla

Preheat oven to 350.  Line 24 cupcake tins with wrappers.  Open 24 Oreo cookies and place the cookies, cream-side-up in the bottom of the cupcake wrappers.  Take the 24 non-cream sides and place them into a ziplock bag with a hand full of unopened Oreos.  Close the bag and crush the cookies with a rolling pin (a jar of sauce or heavy glass works here as well).  Set aside crushed cookies.

Combine cake mix, eggs, oil, vanilla, and sour cream in the bowl of a mixer.  Mix until just combined, about 30 seconds.  Add 1 1/2 cups of the crushed Oreos.  Mix until they are evenly distributed throughout the batter.

Pour batter into cupcake tins.  Fill 3/4 full.  Bake in the 350 degree oven for 18-20 minutes, or until toothpick inserted in the center comes out clean.  Cool completely before frosting.  Frost cupcakes and top with 1/2 Oreo.

Frost with your favorite vanilla buttercream recipe.
